You know what we’ve never posted about here at Peachy Green? Peaches! I’d say better late than never, particularly as the golden fruit is at the peak of its season in the Northern Hemisphere. I made tasty peach cobbler last night, which inspired me to write about this delicious dessert – and how we made it “green.”
First off, I’m proud to say that the peaches were grown within 100 miles of my home, which is the foundation of the local food movement. Eating green can be accomplished by choosing fresh items with little or no packaging. It also means keeping in mind the distance which your food travels from farm to market. Buying local means that less fuel is required to get items to your plate! And, it tastes fresher, which is a win-win for everyone.
So, I bought my peaches from a corner fruit stand (properly permitted of course). They had just arrived from a local orchard less than 50 miles away. Once I had about 3 1/2 pounds of the fruit, I had to decide among several peach desserts recipes. I settled on my mom’s tasty peach cobbler recipe. Without further adieu, here it is:
- 2-3 cups fresh peaches, sliced and pitted
- 1 c. rolled oats
- 1/3 c. all purpose flour
- 1/2 c. brown sugar
- 1 T. cinnamon
- 1 t. salt
- 1/3 c. melted butter
- 1/2 freshly sliced lemon
Place the sliced peaches in a greased 13X9 inch glass baking dish, arrange in a single layer. Squeeze lemon juice over the top.
In a separate bowl, combine dry ingredients, then add melted butter. Stir until mixture is crumbly. Crumble topping over the peaches until covered. Bake at 375 degrees for 35 minutes. Take out, allow to cool, then serve with ice cream, whipped topping, or even fresh milk!
